“Lee had an idea to brew a kind of Thai spin on a Belgian-style farmhouse ale this time around. The yeast strain we used contributed some of the fruity esters typical to the style, but also some notes of tropical fruit and banana that are typically found in a German hefeweizen. The Thai twist came in the form of aromatic kaffir lime leaves; they gave a unique flavor that balanced so well with the malt and yeast. It really started melding together nicely after six months. I loved it, and I know Lee did too. To this day, the 04.04.04 is one of his favorite beers that he made while he was here.”
